Low Carb Meatballs
Here’s what you’ll need:
1 lb ground meat (I used beef, but use whatever kind you prefer)
1 lb ground sausage (I used pork, but again, use what you like)
1 cup almond meal
1 egg
1 small shallot, finely diced
2 cloves garlic, minced
1 Tbsp fresh chopped basil
Here’s what you’ll do:
- Preheat oven to 375 degrees.
- Combine all ingredients in a large bowl. You can use a spatula for this, but I think the best tool is my hands.
- Roll into balls, each about 1-1/2 inches in diameter. Place on foil lined baking sheet.
- Bake in oven for 25 minutes. Do not turn!
Makes about 24 meatballs.
Serve with your favorite gluten-free pasta (or spaghetti squash to keep the dish low carb) and marinara sauce.
These freeze well, so you can keep them around for an easy pasta dinner. Leftovers also make great meatball sandwiches.
