Here’s what you’ll need:
1 cup dried beans
1 tsp apple cider vinegar
1/2 large onion
3 cloves garlic
2 stalks celery
2 Anaheim peppers
1 cup brown basmati rice
2 dried bay leaves
1 cup coconut milk
2 cups chicken broth
1 tsp dried thyme
1/2 tsp paprika
Dash of cayenne pepper
Salt and pepper
Here’s what you’ll do:
- Soak beans with 1 tsp apple cider vinegar for 8 hours.
- Strain and rinse beans. Place in a large skillet and add enough water to cover the beans with about an inch.
- Boil over medium heat for an hour.
- While beans are boiling, chop onion, celery, and peppers, and mince garlic.
- Strain the boiling water, and return beans to pot with chopped veggies. Add rice and remaining ingredients.
- Bring to a boil uncovered. Then cover the pot, reduce heat to low, and simmer for 45 minutes, until beans and rice are tender. Your house will smell amazing while this cooks.
- Season with salt and pepper, and serve, perhaps with andoille sausage. Enjoy.
