Red Beans and Rice

Here’s what you’ll need:

1 cup dried beans
1 tsp apple cider vinegar
1/2 large onion
3 cloves garlic
2 stalks celery
2 Anaheim peppers
1 cup brown basmati rice
2 dried bay leaves
1 cup coconut milk
2 cups chicken broth
1 tsp dried thyme
1/2 tsp paprika
Dash of cayenne pepper
Salt and pepper

Here’s what you’ll do:

  1. Soak beans with 1 tsp apple cider vinegar for 8 hours.
  2. Strain and rinse beans. Place in a large skillet and add enough water to cover the beans with about an inch.
  3. Boil over medium heat for an hour.
  4. While beans are boiling, chop onion, celery, and peppers, and mince garlic.
  5. Strain the boiling water, and return beans to pot with chopped veggies. Add rice and remaining ingredients.
  6. Bring to a boil uncovered. Then cover the pot, reduce heat to low, and simmer for 45 minutes, until beans and rice are tender. Your house will smell amazing while this cooks.
  7. Season with salt and pepper, and serve, perhaps with andoille sausage. Enjoy.
